
I get asked a lot what is possibly left to eat since I can't eat cow dairy, chicken eggs and gluten. Here's a sampling of this week's dinner menu.
Monday- Fresh steamed beets and meatballs with sauteed onions, tomatoes and mushrooms in fresh garlic (For seasoning for the meatballs I add a little bit of onion soup mix.)
Tuesday- Fritata variation (no eggs)
Boil potatoes. At the same time cook up some bacon. In some of the bacon grease saute onions, tomatoes and mushrooms in fresh garlic. Mix everything together and eat with fresh squeezed OJ.
Wednesday- Tuna Salad (canned tuna mixed with any salad stuff in the fridge. Sometimes I add apples, oranges, toasted walnuts or dried cranberries or raisins) It is so flavorful I eat it without a salad dressing. For a really yummy vinaigrette click here.
Thursday- Bacon Tacos (Crispy bacon, sauteed mushrooms and onions and avocados in corn tortillas.) Tip - To help prevent the corn tortillas from splitting in half, I dunk each one in a shallow frying pan of hot water for 5 seconds. Then double up the tortillas for each taco. I'll probably make a banana and coconut water smoothie.
Friday- Shrimp, sauteed veggies over brown rice
Saturday- left overs
Sunday- Tuna lettuce wrap and fruit salad (Mix together canned tuna, apple chunks, celery slices and avocados and wrap up in double layer of lettuce.)
