Andy made this for me, when I was painting her living room. It is super yummy! It fits in great with my new years resolution to eat strange produce, because there is jicama. I actually bought one before eating this salad. Now I know another way to prepare it.
Cut up jicama into strips like you see at sushi restaurants
chop up yellow bell peppers
cut up a couple of segments of a grape fruit
cut up lots of avocado because you can't have too much
It is about equal parts jicama and avocado. Then a little less of peppers and a couple of bits of grape fruit. Mix it all together and feast!
